Figs are briefly in season twice a year and because of this, not only are they difficult to find, but they can be expensive. This beautiful, fruit-infused vinegar has everything you would expect from ripe Italian figs combined with our balsamic base.

Popular with chefs, balsamic glazes are really easy and versatile to use at home, giving a fabulous finishing touch to a range of dishes. This fig balsamic cream glaze has been made by the Giusti family in Modena by skillfully reducing aged balsamic vinegar without the addition of any caramel or colouring.

Sugar: use regular castor sugar but do not reduce the quantities if you want to make a fig preserve that will last for years. This slightly sweet, slightly acidic fig balsamic dressing is made with a handful of ingredients and only takes a mere five minutes to prepare. Usually compared to a liquid hug, everyone benefits from the juicy complexity and how well this Fig Balsamic Vinegar pairs with a multitude of our Olive Oils - - a true 'fig-ure' of culinary elegance. Concentrated flavours of pomegranates and figs along with their natural juices are expertly infused into the family’s original Classic balsamic which is of course matured in wooden barrels in the time honoured traditional way.

Modena balsamic vinegar (75%), white wine vinegar, cooked grape must, sugar, glucose syrup, fig puree (5%), modifier: corn starch, natural flavour, contains sulphites. The must is cooked and then aged in wooden barrels made of oak, chestnut, cherry, ash and locust tree, mulberry and juniper wood. Hint: in Europe, we use the reverse canning technique, which is not recommended by the National Center of Home Food Preservation in USA. I don’t put it through the food processor or strain the seeds out, simply because the seeds don’t bother me and I feel the consistency is fine after I cook it.In this recipe, substituting fig jam for the fresh stuff saves money and time, and ensures you can make this delicious dressing all year round.
